Den, originally named as Jimbocho Den, has relocated to Jingumae in December 2016. Den is a restaurant that features modern kaiseki and is a place for "fun-dining". It was awarded with a michelin star for years and made it to the Asia 50 Best Restaurants list in 2016. Den is lead by the chef owner Hasegawa Zaiyu, together with Team Den. Team Den is like a family with members who share the same belief to make their guests feel like home and enjoy their meal casually. Their passion in food and service has made it a popular and unique restaurant among locals and foreigners.
ABOUT THE CHEF
Hasegawa Zaiyu hopes to express Japanese kaiseki in a more approachable way to let foreigners understand more about the philosophy of kaiseki culture. He adds funny, creative elements in his food and tailor-made the menus to create a unique experience for each guests. He believes omotenashi is the most important thing in running a restaurant. As a messenger who shows the beauty of Japanese cuisine, he felt he has the responsibility to express the omotenashi of the farmer and the ingredients, through his cooking and the service of Team Den.
