ABOUT THE CHEF

Takashi Saito is acclaimed as the genius of sushi shokunin who serves 'the best sushi in the world'. Watching Sushi Saito shaping the sushi into a perfect bite is another way to appreciate the beauty of sushi.

Shunji Hashiba is the side counter chef of Sushi Saito. He was trained for years to follow Sushi Kanesaka's craft prior to taking over Sushi Saito's side counter. He endeavours to expand his own perspective in creating sushi that marks his style while perfecting his skill set.
